I've talked about this before. Making things brain dead easy is what lead to this @OP.SE made FFXIV too casual friendly. I am talking about the difficulty here not the quantity.
Nothing can be said about the quantity. It is polished.
Over all we have:
- Easy Main Scenario Quests.
- Easy Job Quests.
- Easy Dungeons.
If players can pass the core of the game easily with minimum effort. How do you expect them to play at standard level later in game?
If dungeons are that easy, even good players can be lazy if they wanted to.
I would like it if Stormblood moved from Easy difficulty to Normal difficulty. Not asking for content to be hard. Just offer bit of challenge and let players use their minds a bit to develop their performance.
The difficulty at the begging of the game was just right for new players. But why keep it all the way till now? If anything it is not helping players improve. Which leads to what you see now, below average performance.
That is just my personal opinion.

I never asked for the game to be Hard because we have Extreme and Savage like most of you mentioned. Just wish the over all difficulty of the game to be Normal rather than Easy.
It is like any other game you play, the difficulty is set to Normal by default. It starts Easy until you get a grasp of things and you work your way from there.
