Your workaround ideas are great. Honestly, most of my friends in XI who married were not actually together in the real world, it was just something they did with friends for fun -- so I really like the vague 'pact' idea. In XI it didn't necessarily mean you were really a couple in love, yet it was still called marriage. I feel that 'pact' or 'bond' etc. are great terms to allow the players themselves to define what it means to them.
Really, this is an MMO in which we can make whichever choice we like -- we can choose to be a human or a catgirl, we can choose to play a mage or melee, we can even choose if we want to set Fire or Cure, and which slot we want it set in. If we don't want to do any of those things, then we don't have to. I feel it should be the same way with marriage. You don't like it? Then don't do it. And to avoid upsetting others, I think a private instance for the wedding party would be a good idea. This also avoids weirdos trying to mess the whole thing up.
