I sometimes wait for other people to roll. I don't usually wait the full 5 minutes or whatever the timer is. As people roll, it removes that number from future rolls on that particular item - this works to both your advantage and disadvantage.

That being said, in a dungeon where a tank is actually hauling their butt and just chain pulls (I love these tanks BTW), I sometimes forget to roll. If I'm that tank, chances are, I forget to roll until it's around 20 seconds. I don't know why, I just forget loot is a thing when tanking (probably because more things to keep track of - CDs, gauging how good the DPS is or how well the healer is doing, their MP, my MP 'cause I DRK, my enmity levels, enemy casts and if I can throw Blackest Night on someone for free gauge... It's not being malicious, it's literally the least of my worries). Likewise for alliance raids - if people actually chain pull and not sitting around picking their teeth, I sometimes completely forget to roll. It's not the end of the world. Go and AFK - you don't get kicked for 10 minutes and loot will have been doled out.
