That's just because of your playstyle.
I'm not saying you're playing it "right" or "wrong", just that your playstyle doesn't fit the content release.
Then you have people like me: who still haven't finished it all.
First day. I was marketboarding to make gil, doing non-new content to earn GC to be able to capitalize on the new raziqsap market. That's literally all I did.
Second day. I was starting the various quests, just to get to instance unlocks. Then more marketboarding. And the Doman Enclave. I did some older content because I also still care about my challenge log and wondrous tails, but mostly I spent the night joining hunt trains. So much activity, so many centurio seals to get.
The next night, I really wanted to try out the new command missions, because I'm a level-over-time person who likes variety. AV and Sohm Al were really fun, and I joined some more hunts afterwards.
I also decided to do some Hildibrand because I was way behind and I want to be able to enjoy the new Hildibrand stuff when it comes out, so that was another night.
Now afterwards I finally started MSQ, which I spent a night on, taking the time to read through and just enjoy it.
Then I started Namazu. I also realized I had some crafters at 50, so I started Moogle at the same time. The Namazu quest text is HILARIOUS, so I actually take the time to read it. More hunts to fill in the night. I did some leves as well, because I'm an achievement hunter and I can't let those cap. ever.
I still haven't even done Ridorana, new EX trial, the new PVP daily challenge (which I do want to do), and I'll probably be doing some chocobo races and verminion before the make it rain event to get some practice in. I'll also be going back to try to finish my ARR sightseeing log probably in the next month (and ARR sightseeing logs have specific times of the day to do them in), so those DF chocobo races will be helpful to wait in place - so that's a QOL I'm really looking forward to.
And then there are people I know who spent a LOT of time in the new dungeon to get the gear - not for the ilvl, let's face it there's better ways to gear up, but for glamour!
It's all about how quickly you want to get through and how much of the new content you want to do, and also how much older content you mix it in with. If you're not interested in hunts, command missions, pvp, scouring the marketboard, catching up on older content you might not have done yet while spacing out new content, etc... And you just focus on doing MSQ and the new instances once..Then yeah, you won't have much to do.
But as a person who's played other MMO's, I'm not sure what you're expecting, this is more than I used to get in other games.
