Well, he was definitely caught unawares. You don't expect the average guy on the street to stab you when you're waving hello.

As far as the knife, that's actually one of the more effective ways to get at a heavily armored opponent. It can easily punch through leather/hide; if the blade is thin enough, it can slip between the rings of chainmail or even into a gap between heavy armor plates.

Well somehow, a standard Kitchen Knife was the most powerful throwing weapon in FF4. More powerful than throwing an axe at someone. Video game logic.
