Many FATES are being scaled down (coz FATES are hard, right?...).

Yes, yes they are. Some are downright impossible. Maybe you should make a fresh character and try to solo some, because most FATEs are solo content now. No one does them. If they aren't going to nerf them they might as well just delete them.

Every boss in AK is getting nerfed - not echo, direct nerf.

All the bosses in AK were a pushover in November. I can only assume that if SE feels they need to make them easier it's because of some data they have saying some people are somehow having a hard time with them.

I mean, Extremes are supposed to be, well, extreme. Just leave them be. People will either rise to the occasion or they won't.

You're right, people will either rise to the occasion or they won't. So, if they don't, you think they should just quit the game for a year?
