Firstly, DPSing with a one-handed sword and a shield isn't as unreasonable as you might think. Regardless of your opinion on FFX or it's characters, Tidus gives us a very good idea of what such a setup might look like: a large, bastard sword in one hand and a small buckler in the other. Buckler-style shields already exist in the game and there are a number of swords that are very big, big enough that they would look intimidating even when wielded in one hand (which isn't to say that the DRK couldn't have the animations for it's unique attacks wielding the weapon in both hands).

If we want every job to be described the way it SHOULD be and NEVER have the wpn choice of the class changing, then the armory system is pointless. SE will only be creating classes with 1 job. It's either add new wpns for jobs coming off certain classes or scrap classes entirely. SE is going to run into lots of issues trying to do so otherwise. They will either have a fail system or very angry customers.
The important thing to remember is that the weapon you wield as your job doesn't always have to match up with what you typically expect. Did people expect Bard to be the job that came out of Archer? Probably not, because you don't think of a Bard using a bow, and yet it still works for the setting. Do summoners normally use books as weapons? If they ever did, I can't find where. When you're dealing with the armory system, you can't shakle yourself to what has typically been done before and not allowing yourself to deviate from that.
