Some ideas were already given but I have some others with the concept of not needing to implement “new” things.

Why not use the deep dungeons design?
You have a quest to explore something alone, get a deep dungeon with rng in traps, paths, Monsters, etc.

Something else would be bozja duels in sidequests or just more solo instance fights inbetween Storyparts.

Why not have paths that can only be traversed by chocobo?
Genshins Natlan has those great waveriding ways as shortcuts and minigames.
These forced ride scenes in DT like in “not texas” could also have been minigames.

Others could be just simple dialogue minigames where you for example have to piece clues together to solve a case instead of the scions doing all that again and again.

They already have the groundwork or even finished things to use.
