Honest answer, trusting that this is an honest question...

Fatigue sets in. Yes it's pretty the first time. But when you've been done something hundreds and hundreds of times, you're tired of it and just want to get through it quickly. And, ok, very new content hasn't been done that much, but the novelty doesn't last long.

That's one factor, here's another:
Dungeons are so flippin' easy. Did you know that the speedrun strategy for dungeons, even at max level, is to run without a healer? Of course people queuing up in the duty finder will be standard compositions (1 tank 1 healer 2 dps), but this just shows exactly how easy they are. Max size as pulls can be, and they are done by speedrunners with no healer whatsoever.

Now imagine how weak and boring single pulls are. 'Big' pulls end the monotony sooner, and give it some semblance of being slightly less braindead. Not much, but gotta take what we can get, you know?
