So right now, between MNK, NIN and SAM, assuming you dig the playstyle, which is the safest bet for the future?

You really don't want to think about the jobs like this. You should play what you find fun, not what is considered meta, or does the best damage etc. All 3 play differently and you should explore them all to see which appeals to you most.
