One thing to be clear on: the things we fought in Amdapor were NOT Sin Eaters. They were golems in the likeness of Sin Eaters. The question being posed is not so much "how did Sin Eaters get into Amdapor?", but rather, "How did the Amdapori know what Sin Eaters look like?".

The answer to this COULD involve Sin Eaters somehow coming to Amdapor at some point, after which the Amdapori designed Golems to look like them - or it could involve Amdapori peeking into other Shards somehow, or finding records of Allagan research into creating high concentrations of Light, or accidentally spawning Sin Eaters through their own experiments, or any of a number of other possibilities.

One of the most interesting mysteries regarding Sin Eaters, I think, is that they seem to exist only for a brief time. A Flood of Light leaves nothing, not even Sin Eaters. An unflooded world (presumably) has no Sin Eaters. So these creatures only exist for the period of time when a Flood is imminent or in progress. Are they created from humans and animals, like the Voidsent are? What are their motivations during this brief span of existence? Do they seek to devour Aether, like the Voidsent do? Since the Flood endangers them, as well, are they in favor of stopping it? Or do they want it to continue?
