で、プロテスは幻術士が習得すると、リストに書いてあったのでいいですが、
そのリストを一通り見た限りでは、誰（どのクラス）もシェルを習得しない様に見えました。
In the list I see that CON learns Protess (protect?) spell so it's OK but looking at the list it looks like none of the class is learning Shell spell.

はい、パッチ1.20のアクション見直しにより、どのクラスでもシェルは習得しません。
なお、パッチノートに記載している「プロテスとシェルの効果の上書き」ですが、
シェルの効果は薬品による効果になります。
Yes with action changes in 1.20 none of the class will learn shell.
In the patch notes where it states "Overwrites protess and shell effect" this shell effect is effect from potion
