I thought of another thing to add, adventuring fellow.
Things from FFXI that could work in FFXIV:
1) Conquest. Would help to keep zones relevant/alive so people aren't just sitting in towns waiting for queues.
2) Besieged. This was actually quite fun when it occurred in ToAU. A couple/few times a day the beastment gather to attack a major town. Would go great to introduce with Conquest. Story-wise, the beastmen are finally gathering enough numbers to rise up and strike back at the nations that have abused them so much.
3) BCNMs. These are similar to Treasure maps, but you could make them tougher and require a party.
I'm not sure if Dynamis and the other endgame areas would work as well in FFXIV as they did in FFXI. I think it's worth a try though. They already have things like the EX primals and Alex Savage that can't be entered with Duty Finder... at least not until the next major update since they were released. So more Party Finder/Static/FC-oriented content could be quite beneficial. Though if they did that, they would probably have to make a "mini" version as well for more casual players.
That's been one of the huge selling points for FFXIV is that casual players aren't completely locked out of things like they were in FFXI. That's also why they couldn't simply port over a lot endgame from FFXI, because it was all gated behind party content that could be fairly hardcore.
The thing that dragged me back to XI, Red Mage.
A puppet master that doesn't suck would be fun.
That's all I can think of though, I'd really prefer for XIV to carve its own identity. The less it takes from XI, the better.

I'd have liked to seen Beastmaster here in XIV, and Dragon for the Dragoon, just not the same without it :P Lets face it XIV's dragoons are more like simple lancers :P
Also tanking ability ninjas had in XI would been awesome toocombining the jobs, XIV does'nt do this as well.
The Auction House
Maat (huehue)
Open zone levelling dungeon (Garlaige Citadel style)
campaign and besieged mostly
Some structured endgame for varied group sizes
