This has nothing to do with undercuts. This is simply the market evolving towards its more stable state in regards to the balance between demand and supply (it's called "equilibrium").

This particular item was in very high demand, but very few people could craft it, hence the very high prices. But since the amount of Lv60 crafters is increasing as well as the materials are starting to be more easy to get, and the number of "first rich buyers" is decreasing, the price is naturally going down to find its equilibrium so crafter can still make some profit without the prices being completly bonkers.

Besides, if a crafter can still make some profit out of it by selling it at a lower price, it allow more potential buyers to come and take the item, allowing the crafter to buy some mats in return and craft some more of these.
In the end, the crafter will probably end up making more profit that way instead of waiting weeks for a very high priced item to sell.
