Right now all the hard content is at end game, so we are forced to complete it to advance our characters. That is why FFXI was more casual even though it had harder content.
I really don't see where you're going with this. You couldn't even DO any of the CoP endgame if you didn't complete the story. The endgame area, Al'taieu, was locked behind the difficult story missions. What is stopping people from crafting, leveling jobs, or having a good time in this game? Why do they need to rush rush rush at endgame again? It's entirely possible to advance your character in FFXIV as well without doing the endgame. You can still craft, level jobs, and have a good time without throwing your body at endgame... I don't get the difference.

Not all of CoP missions were capped, only the first half, and you absolutely had to at least get past level 60 to get into Al'taieu if I recall to beat Proto-Ultima. I think there was another fight after that was 70+ that also had to be completed before you could access the endgame area.

Thanks Not sure why MMOs haven't tried what I outlined. I've seen it in other games like First Person Shooters for example. Even way back in Quake III so many years ago, there was a wealth of player vs player maps, some of which I believe were user created. I believe if user created content is implemented and advertised well, it could be the next big thing. Am still waiting to see such a thing. The big thing is it adds content without wasting dev resources...I'm sure some users would create bad or undesirable content, but some players would be able to create truly great content within such a game...if only given that chance. Bad content would simply be avoided by the players.
