I wouldn't want these by default. However, giving the option to customize it yourself would be good if it's not already there.

If you check the latest Alpha video SE posted on gathering/crafting, there's three tabs near the chatlog: General, Battle and Event. It could be Event is for quest text.3. Have NPC dialogues appear in the chat log.
In the released alpha videos, I noticed that NPC dialogues don't appear in the chat log. Since I'm very interested in the lore of Eorzea, I always saved the NPC dialogues after completing a quest or reading something of interest, widening my chat log, activating all the filters and taking a screenshot of it. Example:
Final Fantasy's usually allow menu color customization with blue always being a choice, if not the default, so I hope this blue version makes it into the final game as an option along with the default grey. Although I'd welcome more, I'll be happy with just these two at least.
When I use a gamepad I'm usually right next to my keyboard anyway, but you're suggestion could be useful. However, more than adding shortcuts to the gamepad, what I'd really like is an option to automatically hide names with the scroll button...
I am thinking the event tab in the chat log will have npc dialogue. Least, that's what I hope. I think I recall a dev response saying we would be able to get npc dialogue in the chat log somehow, but don't really remember...
It looks blue, but I think thats dark grey. Either way blue/grey w.e you should just be able to make it w.e color you wanted from a Config menu or whatnot. I think the menus in general should look more pretty ^^This is what it should be, yes. A single common theme and color palette for all UI elements.
Right now the 2.0 UI has a futuristic style for the unit frames and health/resource bars with neon colors and sharp edges, a steampunk-metallic look for the map and minimap with yellow-gold colors, and a stock/modern UI with rounded edges and monochrome gradients for the chat menu and inventory/craft menus. It's kind of an eyesore.

I've all the saved dialogues in a dedicated folder, so I can always read them again (it's hard to remember everything).
If in A Realm Reborn dialogues won't appear in the chat log anymore, then I'd have to take a screenshot of every single one, which wouldn't be very comfortable.
Therefore, is it possible to introduce an option (that could be triggered On or Off, for those who want it or not) where the NPC/Quests dialogues appear in the chat log, too?

Other people might prefer a more utilitarian/minimalist appearance. They can't please everybody. They can have some options but too many options and you start to have a feature creep problem where stuff either doesn't get finished or gets delayed and delayed and delayed as they think of more things to add.
at any rate, I think the menus look fine. a nolstalgic style is cool but not really necessary in the end.

That's not gray. it's blue. No amout of glare (which is only visible in one small spot on the screen) could change that to be not blue. I even used ColorZilla's eyedropper on that image over the game windows. Everywhere I click that isn't a piece of text or some nonbackground object is primarily blue (meaning there is more blue than red or green- the actual color is more "purplish". here are some color samples for your enjoyment:
rgb(71, 63, 112)
rgb(71, 57, 113)
rgb(45, 44, 78)
If that was "gray" the three numbers would be much closer to eachother.
