What I am confused about is, what is the point of tracking durability when you have CP?! If you run out of CP or Durability do you have a lesser quality item? or is it like 1.0 and you completely fail synthesis and lose item?

If you run out of durability your synth fail.
If you run out of CP you can only use the standard synth skill (which cost 0 CP), but you can still reach 100% progress. The CP is the new limit how many skills you can do during a craft (instead of 5 skills, each skill once). The CP increase with level up. In the video it increase from 142 to 147 after the level up.
