Right? So does everyone. They learn the fight gradually, mechanic-by-mechanic, phase-by-phase, rather than all in one go.

But you can watch the video an hour before starting the content and then take notes on any mechanics that are relevant to your role or that you think are not obvious ie. no point including a raid-wide aoe or a well-telegraphed donut aoe, just write down the really complex ones.

An old trick I used to use when I started the game, was to create a macro with my notes and I would press it whenever the fight began or when a mechanic came up to remind myself.

Just an example. Short notes that summarize it for yourself, that you can click while fighting.
  1. Google the fight name and you'll probably find a link to consolegamewiki at the top.
  2. You will probably find icy-veins nearby.
  3. You will probably also find SaltedXIV.
  4. There are dedicated Ultimate discords that will have these text resources too. In fact, I see text resources referenced frequently in Ultimate PF descriptions.

This is actually what I wanted to do, but I was afraid I'll get gatekept from the ultimate, just so they can have people who actually know the fight well to do it instead. Especially if I look in PF and haven't found a guild this year to do it with.
