Some achievements are intended to be a grind so those who enjoy grinds have something to do. You've just met one.

Following a player-produced optimal workshop path is not going to make a gathering achievement easier to get. It's going to make it harder since most of the value in the workshop comes from materials that can't be manually gathered.

The amount isn't that bad compared to the effort required for Landking of the World. I'm also confused about why you're bringing up time limited achievements. There's no deadline for completing these achievements because there's on reason to believe they're going to be removed from the game. If you're talking about in comparison to time-gated achievements, achievements that aren't time-gated almost always have higher requirements than those that are. It's a poor comparison point.

Why get upset over an achievement that offers no reward of any sort, nor is a stepping stone to another achievement that does?

If your gut reaction is to say "but I'm a completionist", use this as an opportunity to take a first step to rid yourself of an extremely healthy obsession. You do not need to do everything. You're only hurting yourself by going after useless achievements in a game when you don't even enjoy the activity required. Dedicate your time to the content you do find enjoyable instead - even if there are no more achievements left to be earned from that content.

Please don't say "but getting achievements is fun to me". Clearly it isn't if you felt the need to post this.

I figure I'll casually have the achievement completed in 2-3 years because I'm going about it casually.
