I have a great recipe for mango salsa.

Kacho Nacho’s Black Bean Mango Salsa

1 14.5 oz can of black beans, rinsed in water and drained

3 mangos diced

1 red bell pepper diced

1/2 cup red onion diced

1 jalapeño pepper minced (remove seeds)

1/4 cup of lime juice


1/4 cup cilantro leaves finely chopped

2 tablespoons olive oil

1/2 teaspoon cumin

1/8 teaspoon cayenne pepper

1/8 teaspoon salt

Combine everything together in a large bowl. Place in a refrigerator for 15 to 30 minutes. (This allows the flavors to mingle)
Season to taste, adding more salt, cayenne, or lime juice as desired.

*protip: If you buy the mango pre-chopped, dice it smaller chunks, put them in a separate bowl, and apply the 1/8 teaspoon salt to the diced mango.
Allow it to sit for 30 minutes. This will draw out the juice of the fruit, resulting in a tastier salsa.
