Wouldn't be realistic, because it would simply mean adding over 1000+ inventory slots. When -you- see "just a category", internally it's most likely extra line of code, for each item within that category.
Right now we have 200 slots + crystals + currencies.
Now, each single materia type got 4 grades, and within these 4 grades you have ~4 different values. Which gives ~16 different tier per materia. How many different materia do we have? Too lazy to search now, but something around 80 I'd say.
80*16=1280
So by granting materias their own category, you directly enable players to own 1280 extra different items on top of the 200 + crystals + currencies they already have.
I just hardly doubt that the current XIV will be able to manage that. If it was possible without any issue, then we would already have an even bigger inventory.
The best solution for now is to be able to stack them, as long as they have the same value.
