They have a manager, 3 designers, and I think they got an intern / assistant somewhere in Stormblood or Shadowbringers.

They said healers, but multiple jobs have had extremely glaring issues almost every single expansion. MNK for 5 years, Healers for 5 years, 2.0 Warrior, 3.0 Bow Mage, 5.0 RDM Terrible Mana management, the list goes on.
Well if we are going to compare, BFA end credits only has one lead class designer then a bunch of game designers. But for the sake of argument lets say they do have a huge staff. While WoW only has 12 classes, each has three specs that they have an extremely hard time balancing out. Always has. They are basically trying to balance 36 "jobs" on top of revamping the class system during each expansion. And while a Class maybe viable, a certain spec isn't.

The benefit WoW has that FFXIV doesn't is Beta testing before launch to have players help with the glaring problems. A lot of problems from 5.0 could have been avoided if players could have tried the LV. 80 job and gave feedback. But then everything isn't a secret at launch. Personal i think SE needs a beta test to avoid problems.

To answer the OPs question though, yes we do need new classes to keep it fresh. A lot of players have everything maxed out and this gives them fresh content to play.
