Obviously you wanna use your buffs (requiescat/FoF) and your tank role skills like low blow and reprisal as needed. But yes, of course it gets a lot more interesting later on when you account for end game.
Things will get more engaging as you get involved in 8-man content, even the lvl 50, 60, 70 stuff as you progress through story. However, nothing is quite as engaging as endgame 8-man content, like savage or ultimates if you're not satisfied yet lol.
Not really. Minor changes to gameplay overall, what you play is what you get as a tank, even in end game. It basically all revolves around how the fights are designed. Again, they went overboard with the simplification for Tanks and Healers this expansion.
Not against mobs, no.
There are a handful of mobs that do spice things up(BEEEEEEEES) but those are few and FAR between. Otherwise just mash the super fun AoE skill(This isn’t a dunk on Tanks, I found ALL the AoE rotations to be boring). Do make sure to point enemies away from the team though, they like to sneak in AoE cones.

Only you can decide if it's fun or not, don't rely on others to tell you whether something is fun. In a previous MMO, for quite a long time, I played what was considered the "worst" class/spec combo in the game, that everyone said "don't play it"...But I did anyway, because I thought it was fun, and it worked just fine and I could play it well.
