That would be great if the mobs came alone.. they don't.. pull one gremlin and get way more than I wanted to pull.. I use single target spell to pull.
What Egi are you using? If your using Garuda-Egi and have it set to Guard/Sic then this could be why you're pulling more mobs. It's default attack is an AoE attack now, so if it attacks while the mob is close to other mobs... they will get hit and attack as well.
I'd recommend using Ifrit-Egi fi you're not already, and always make use of it's skills/specials when fighting groups. If you're always pulling groups even with Ifrit (it's single-target, it does have aoe but that's only used when you command it) then I'd suggest hitting one with Tri-Disaster, then Bane to spread (doesn't cost aethergage anymore), then spam Outbust. Also use the oCD Egi-Assault skills for extra dps. Doing this will allow you to use Ruin IV on a single target for high damage. Oh, and start with Devotion (aetherpact)... bonus damage on all your dots, then when all mobs are grouped on you hit Enkindle for Ifrit's AoE.
Your other option if you want to level Summoner but don't want to deal with it in overworld is to go Scholar. Leveling in SMN will also level SCH and vice-versa. If you have 385-400 healer gear... you might find Scholar easier due to the self-healing being better (have Chocobo as dps).
Fates scales with how many people do them in a certain area over a certain period of time. Since there's a lot of people leveling up and upping their Share Fate ranks, the fates are relatively harder in the new area now than they will in the near future. If you try fates in low pop instances during down time (eg. late at night) you should have less problems.
