I'm not sure how the time spent choosing it is relevant though?

If someone asks "how would you like me to refer to you: 'he', 'she' or 'they'?".... how long would it take you to decide the answer?

If the option was there (as it may well be in future games where you create your own character), it's not something you could judge the usefulness of by how often you consider or adjust it. It's something you set at the beginning, and the effect of it carries long afterwards.

How often do you adjust the UI once it's set up and working for you? How often do you adjust the language settings? These things are highly visible and affect your experience, but they're not things you engage with for the sake of it.
