Lock in a design? Races throughout the FF franchise kept certain distinguishing features but they can hardly look like themselves across games. Even the races we have here that are based on XI races or what not have their differences. Moogles have varying differences depending on the game they're in, with the most extreme example I can think of is the Ivalice Moogles.
Another game could well introduce their own take on male Viera and the sky won't fall.

Keeping your worldbuilding intact, and keeping the identity of races and characters intact, is much more important than having one more skin for your character.
World building that breaks apart if you have two playable WHMs in a party, or SCHs, or BLMs, or---- oh and this one's a male Keeper of the Moon, standing next to a Duskwight Elezen, well that's just not right--

If they were really adamant about the lore, this would've been a single player game.
