When you kill a boss only to get a worthless weapon because materia is too powerful, you know something is wrong.
If you recall what Yoshida said about Materia, you'd realise that more than one materia on anything is intended to be powerful. You'd also recall him saying that raids/instances/etc are balances with one materia per equip attached in mind.

So it's either you spend a time for your generic looking, powerful multi-socketed weapon or you spend time for a good looking good weapon (ok, except for mages?). Double socket impplies either tons of time getting your materias or tons of money, while the moogle fight requires less time and much less money. In both cases luck kicks in for either meld succeeds or drop rate.

Still needs tweaking, but it's a way to balance things. And also, i have no problem with player made things outclassing drops, i means that's the only reason to be a dedicated crafter at this point.
