Yes gathering is great source of income. You just need to research your server's particular market board. You can either go volume or go rarity to find value. Both have about the same efforts in the end.

    Volume example:
Many frequently used recipes consume large amounts of low level items. Many crafter are just too lazy to get these materials themselves and will buy it from you.
LTW Glamour Prism (Leatherworking) consumes Toad Leather which is made from Alumen
WVR Worsted Yarn consumes Natron which is made from Effervescent Water

    Rarity Example:
A currently high value top tier raid food is Pork Kakuni which is made from a couple or rare components Jhammel Ginger and Dusklight Aethersand. Both of these items are derived from gathering nodes which only appear for a few RL minutes every Eorzean day and have relatively high thresholds to get them.

DoW / DoM characters can earn a large amount of Gil too but require more effort:
    DoW Gil Guide
Maps are another great source of income:
Timeworn Dragonskin maps open The Aquapolis and Timeworn Gazelleskin maps open The Lost Canals of Uznair
After an averge MAPs group I usually walk away with 500K - 2M Gil worth of Gil and items.
