How so? I do not believe I have missed any content by skipping quest text and cutscenes unless there is some duty or trial I do not know about unlocked by watching and reading everything through.

It depends on how you define "content".
A lot of players (myself included) enjoy watching the story develop and how the characters interact with it. To these players, the story itself is seen as valuable "Content", and skipping the quest dialog/cutscenes can be seen as ignoring a critical part of the game.
Other players (such as yourself), hold no interest in the story or the dialog, only caring for the gameplay/dungeons/etc. To these players, you're not missing out on any real content.
Neither way is a wrong way to play the game, but that's where the confusion comes from. "Content" is really a tricky thing to define for any game, because players find value in different things.
