Speaking of "Last Remnant" I am curious as to why this small island was made worthy enough to pluck from the ground and levitate? Could this be related to the Remnants of Sephirot?

I think it is a reference to the game Last Remnant (we also got haircuts from that game, just saying).

As for what exactly it is here... I kind of figured it was the "last remnant" of a floating island. Lets say the Zeta Quadrant used to stand there, but now the only remnant is what we see.

If the Anti-Tower is Eureka, and below the Labyrinth of Ancients somewhere in the chasem, is it possible it was a hanger for Anti Primal weapons simmilar to Ultima and Omega? or at least an R&D area that led to Ultima and Omega?

Eureka was historically where the ultimate weapons were stored in Final Fantasy III, so a favorite theory of mine was always that in Eorzea, it was where the Allag stored their Ultima Weapons. I think Azys Lla and Seal Rock are where much of Allagan R&D went on, though.

Since someone mentioned an Antitower being similar to antibiotic, or a weapon meant to destroy a tower, I considered something similar.

My thought was that the Antitower was the tower meant to be "Anti" to the Triad, so there would be 3 Antitowers, one for each. What happens when the WoL goes somewhere with Allagan tech? Usually things are destroyed. What happens when our accidentally-destructive WoL goes into an already-waning tower sealing one of the Triad?

The guy who was translating on Mr. Happy's stream said it could also be read as "oppression tower". It could be a containment field generator or something. Specially if it's in Azys Lla to suppress the Warring Triad.

Crazy thought. What if its tied to the many 'sealed away' primals that Taimat mentioned. Remember in the Cutscene of the battle of Silvertear Lake, when the Airship blows up primals shoot out from the explosion.

What if there is a heap of primals sealed away underneath the lake and that's what Midgardsormr was guarding? Not sure how that would tie to Nidhogg though.

Tiamat was referring to sealed away eikons such as the Triad, not primals. They seem to be establishing a distinction between primals as false gods and eikons as real gods. We still aren't sure of the specifics of how that seal under Silvertear Lake worked either; was it the actual primals themselves sealed in there or just the excess aether that was necessary to summon them? We've never really gotten much of an answer on the subject...

My thought is partially born from the fact they did say we would find out what was under Silvertear in the HW expansion and what Midgardsormr was guarding. That's why I feel pretty confident that at some point we will find ourselves moving back to Mor Dhona again.
