Actually there can be quite a lot of variety in tanking. Just look at World of Warcraft. Each tank has its own unique flavor to how it tanks:
    • Warrior has offensive utility, high mobility and their active mitigation is entirely proactive, requiring them to anticipate damage rather than react too it.
    • Paladins have a selection of team support abilities and defensive utilities and can choose between healing their party members/selves or increasing mitigation.
    • Death Knights have great control over their own survival and have a number of low-duration, low-cooldown abilities they can use to "roll" CDs.
    • Druids take more damage, but have high evasion (upwards of 60% when their active mitigation is used) and are extremely versatile, able to use certain abilities to deal physical or magical damage as well as heal the entire raid nearly as good as an actual healer (for a limited time).
    • Monks take significantly less damage per hit, but that damage is applied to them over the next 10 seconds, but by using their active mitigation and other abilities, they can reduce or even completely clear that damage, allowing them to soak up extremely high amounts of damage and then expunge it.

So no, there are actually many, many ways to tank. FFXIV just hasn't touched on them yet.
