Watching the World of Darkness stuff (Myahele, the gif in your signature is disturbingly distracting) I could not help but think "YOU DARE LOOK UPON THE HOST OF SOULS?!!!!"

I LIKE the fence. I get 2 groups to laugh at then.
My point is people are going "Oh, he gets flame sword, totally a Red Mage," when in fact there is nothing "Red Mage" about what's going on.
I don't know if the Scions CAN die. In theory they're the same type of being as we are, and our ability to resurrect at aetherytes is an explicit power afforded to us by Hydaelyn, not a case of gameplay and story segregation.
I even seem to remember a conversation to the effect of that going on between the scions, but they don't KNOW they all have the same power and thus aren't really keen on trying it out just on the off chance it's exclusive to us. Pluuuuus remember what Leviathan was able to do with that one priest.
Being one of Hydaelyn's tempered is a real crapshoot.
Minfilia is the only Scion (other than the Warrior of Light) that possesses the Echo. The rest are just highly educated people from the same place.

actually there are teasings and rumors here and there that each of the Scions is an avatar of the gods, or at least DO have some sort of special power. Minfilia's powers are just different from the others. AFAIK they still can't be tempered, so there IS still something special about them all.
And since we only had six or seven of the twelve avatars at the battle of carteneau flats, that's why the seal on Bahamut failed.
The numbers add up too:
Minfilia
You
Y'shtola
Thancred
Yda
Papalymo
Moenbryda
Louisoix
Urianger
Alphinaud
Alisaie
Yugiri
Of course this is all speculation. For all we know there could be another since the status of some on there is questionable (there is an actual total of 16 named members, though Hoary Boulder, Coultenat, F'lhammin, and Tataru have more of a "peanut gallery" vibe to them, and we're still not sure how Krile fits into all this.)
I only list Yugiri, btw, since the Scions seem to have a key member of each race as a representative with very little or no overlap, with about 2 of each race if you count Alphinaud and Alisaie as one person for that purpose, what with being twins and probably representations of Nald and Thal.
Bahamut simply just overpowered the seal before it could be completed. He was held in captivity for a very, very long time (among other factors, which are Final Coil spoilers so I'm leaving them out here), so when Dalamud burst open we had a very, very pissed off elder primal on our hands - far more than the Twelve could contain. I don't think any of the (soon-to-be) Scions were present for the actual Battle of Carteneau, as they were scattered around Eorzea in prayer at the marks of the Twelve that Louisoix placed so he could channel the populace's prayers to summon them in the first place.
Also, it was stated at the introduction to the original HM primal trio that Thancred was especially vulnerable to tempering thanks to him being possessed by Lahabrea, so at the very least he's basically confirmed not to have the Echo.
I do wonder what will they need Minfilia for in their plans.
Only thing I can guess is that Minfilia will be a type of special sacrifice or to serve as a Physical Host for Zodiark.
That's probably the most likely reason, as Iceheart has already set the precedent by using herself as a host for Saint Shiva. Both Minfilia and Iceheart have the Echo, which is likely the key in doing so.
What if it's the other way around? What if they need her to be a host for Hydaelyn so they can actually contain/kill her permanently?
