Its not exaggeration, its perception. For me, the hardest part of Demon Wall was finding his Flank zone.
To make Demon Wall easy, all you must do is focus and kill the bees as soon as they spawn, while doing the Center-Side-Repel Dance. Focus the Wall to make sure you see Repel is coming.

For Titan HM, don't stand in Weight of the land. Hardest part of the fight is learning the Bombs. But just remember the key rule to Bombs, they explode in the order they were dropped, First to Fall, First to Blow.

See that's the first post I see saying this is what do, just know the rotations of the fight and it's easy. No one says that, all I see is blah blah, so hard for dps, people falling off the edge, get all your relics out or you'll fail. x_x

There are a couple ways to handle all the fights that've been brought up.

Demon Wall: AOE LB the bees when they spawn, or LB one and kill the other, or save some dps cooldowns for when they spawn. . . Basically, if you can dodge their AOE and Demon Wall's at the same time, you'll eventually win. The strategy around release was the AOE LB, but it wasn't long before people started outgearing it to where they could kill the wall before the bees even spawn.
Ifrit HM: I honestly think the easiest strategy at this point is to burn one nail, then AOE LB the rest, unless you really want to spend a lot of time at the beginning building up the LB bar. That being said, there's more than enough time to melee LB3->burn x2->LB last nail, even if you have no caster to LB (though, honestly, that might be overgearing it a bit, not sure). Absolute worst case, you should be able to survive a 1-nail Hellfire with a tank LB.
Garuda HM: As long as the tanks (or dps tanks) can keep the sisters from cleaving the healers, you're pretty much golden. It's a rare occasion I see a party fail this dps check.
Titan HM: You can build LB to wherever you think you need it in the first phases. Having a melee LB3 makes heart go much smoother, as long as they know when to use it. Really, the big issue (as far as the dps check goes) with Titan is having all your members survive into heart phase. If you can do that, you shouldn't have much issue killing the heart in time. And the trick to getting people to survive is getting them to know the encounter (or someone calling it in voice chat, or macros, or something).

Basically, I haven't seen a dps check in game yet that is both tuned tightly and not trivialized by a well-timed LB.
