To me "We'll look into it" currently means "Don't hold your breath or you may turn blue and fall over"... Once the game is fixed a bit more it may actually mean that they will look at it. But, right now I think stuff is added to a list with extremely low priority with a hope that players will just forget about the vast majority of them.
It means "The idea you have brought upon us is an interesting idea, and will be brought in to consideration when discussing plans of changes for this certain feature.". >_>

I think part of it is that the interviewer wasn't asking the right questions. As one example; who the hell cares about new gathering jobs? What, exactly, isn't covered already?
To me it means that they can't analyze how X thing works and how Y proposal will affect it. Other popular MMO devs will tell you flat out that they will do Y, or something similar to Y that they already had in the works, or that they can't do Y because Z will happen. It's nothing more than an acknowledgement that they read your post; they're still keeping you in the dark about the game.
I tend to see it as a canned answer to ridiculous questions used so the feelings of the poster aren't hurt. ex "I want to give DoL jobs special special mounts based on class like a tree for a bot a boulder for a miner and fish for a fisher." That sort of thing.
