That's because the quality of midi back then was piss poor
Midi today is way better, as you can very well see with all the new game music that's out now. Most of the music you hear on FFXIV is still midi, just really good quality midi. Back in 1997, midi wasn't as great, and that's why it sounds so meh in FF7. Also, the game disc could only hold so large of music files, so the less quality the sounds were, the smaller the file would be.
I also don't mean to sound like a up-nosed jackass, but I want to add that I write music as well, both using electronic midi arrangements and writing scores for orchestra too. I have a fair amount of experience with how this works.
Nothing against Uematsu but if you're gonna replace him, I'll only accept Kano Youko (seriously, they got her to do Ragnarok Online II but not this game?), Shimomura Youko (Legend of Mana's epic soundtrack came from her), or Ito Kenji (the guy who did the music for the SaGa games). No one else would suffice.
* The sad thing is that FFXIV turned RDM into a turret, and people think that's what it's supposed to be. It's supposed to combine sword and magic into something more, not spend the bulk of gameplay spamming spells and jump into melee for only 3 GCDs before scurrying back to the back line like good little casters.

I agree with OP, I dislike a lot of the songs, only about 3-4 I enjoy. I think Nobuo has lost it tbh.

Do you like "Cosmo Canyon?" I like "JENOVA" & "1Wing Angel" as much as the next guy, even after remix/rearrange #10,005, but I think "Cosmo Canyon" is my favorite song in VII. "Those Who Fight Farther" (or however its translated) and "Those Chosen by the Planet" are also good. Overall I find the VII OST incredibly underwhelming, though - aside from these mentioned - several of which are rearranged all the damn time.
Anyway, I like the Mor Dhona & Coerthas background & battle music immensely. I think they are some of the most well done tracks in all of XIV so far. I haven't listened to the entire OST or any rearranged/orchestrated XIV songs yet. Mostly just what I hear wandering around - though (unlike XI) I have my sound turned off a lot because I'm watching TV while I do monotonously boring things like fish/craft. Haha. Fishing/Crafting music is cute the first time, but damn it sucks after the 300th hour (or quite possibly the 2nd hour).
Boy it's all about that Mako Reactor for the grimy atmosphere, and my favorite battle theme from FF7 is actually birth of a god. Mor Dhona is probably the only area theme in the ENTIRE GAME that is both well made and actually suits the setting. I sorta liked the music in La Noscea in beta 2 but once I went to Thanalan/Black Shroud I was veeeeery disappointed. It's funny that while I was slightly bummed when I found out that Naoshi Mizuta wasn't going to be a part of XIV's soundtrack I was still looking forward to Uematsu's work.
