I'd like things that make a nice 'collection' of things like;
Kill 1 of every single type of (non-boss) monster.
Gather every single gatherable item at least once. (Of course divided by gathering class)
Craft every single craftable item at least once. (Of course divided by crafting class)
Stuff like that.
Totally reminds me of that God-awful Trophy/Achievement from FFXIII where you had to have held every single item in the game at least once. ;_;I'd like things that make a nice 'collection' of things like;

Naw, having to HAVE every single item at least once sounds pretty ridiculous to me. But crafting/gathering all the stuff that can be crafted/gathered doesn't sound unreasonable. It's a long-term goal achievement, rather than a short-term. Would also make those awful pre-existing gathering/crafting achievements (gather/craft X amount of times) less of a total pain.
What about an achievement you that doesn't allow you to obtain any achievements at all unless you have Legacy Status?
Marathon Moogle: Walk/Run/Boat to every world zone without using teleport, homepoint, airship or mount. (Resets every time a teleport, homepoint, airship or mount is used.)
Boat is allowed because of limsa lominsa. Raise is allowed so bring some friends. Would be cool to be able track your progress.
Tour du Eorzea: Similar achievement that allows mounts.
