What's sustaining the game content-wise is really the fact that drop rates are terrible and the loot system is terrible, not really because of the quantity of the content. 4 dungeons, 2 easy mode bosses, 3 hard mode fights and leves don't really sustain a lv1-50 climb, IMO.
* The sad thing is that FFXIV turned RDM into a turret, and people think that's what it's supposed to be. It's supposed to combine sword and magic into something more, not spend the bulk of gameplay spamming spells and jump into melee for only 3 GCDs before scurrying back to the back line like good little casters.

Hamlet is not really part of the level climb. Unless anyone can PUG the hamlet defense fights. Even then, we go back to the "terrible drop rates and loot system" bit.

I like to fish a lot. Behests are fun for meeting random people. People are always crafting (some like it some dont). Achievements are a nice goal to work towards. Hamlet Defense is not only a fun battle, but also a competitive feature for DoL and DoH. Caravan Escorts are done for Seal collecting. Imperial Invasions can get pretty heated. Plus the 7th Umbral Era Event is a good touch for those interested in story (I've only found Urianger once but it was a cool little find). I will concede to this. I'm generally at odds with anything not related to battle content because...well, I'm not fond of crafting and gathering is not that interesting to me. Repeatable events (leves, behest, hamlet, escorts) can only take the game so far, though. I'm admitedly more fond of zone storylines and dungeons. =/I like to fish a lot. You say this as if I've never played an MMO before. Considering the only thing that is tokenized is primal weapons, I wouldn't go as far as say that it is a part of progression in this game. There'd be no excuse for bad drop rates if a) we had more dungeons and b) pacing for progression was better-set.
Take Garuda, for example. She could easily be put on a 7-day lockout after kill, with a 100% chance of dropping one of four different pieces of gear and a 35% chance of dropping one of the seven weapons, with perhaps changing that token she drops to a trophy with a 5% drop rate that can be traded for any one of the weapons. That's better paced than having to spam an event, getting nothing but dark matter and so on. Of course, the game would need a lot more battle content to support that.
Going back to something I asked earlier, are the hamlet defense fights puggable? I haven't touched the even because I was under the impression they weren't.
