I think it's important to recognize that SE no longer designs dungeons in FFXIV. They are boss fights punctuated by indistinguishable mobs. Basically all the raids/trials/dungeons are "boss in an arena" with some largely-irrelevant frills thrown in.

There's nothing fun about it.

For example, small, non-fatal interactions with a dungeon's environment: The binding traps littered throughout Hullbreaker Isle. The tornadoes and waterspouts of Neverreap. The water faucets in Saint Mocianne's Arboretum. The wandering tonberries in Wanderer's Palace. Etc.
That would be a start. Currently the corridors between bosses would be no less interesting if they could be cleared with auto-run/auto-attack.
