The whole point of the character was that they didn't want that, and instead wanted to be a manly man - so it was this fun juxtaposition.
That is to say, the character was quite literally groomed into taking a sexual identity they didn't want. So it does kind of feel like going "Actually, they're trans now" is...a little bit weird, because it was indeed outlined that Bridget was abused and forced into this role that they didn't want. Narratively it can absolutely happen, but it has some very unfortunate connotations.

My point is this, if the developers want to make changes to the game world and characters that is on them. Bridget has always been a boy. As someone who has been around since the game's beginning, he was meant to be a tragedy case for a boy being raised as a girl due to his village's culture around boys and girls.
Now, if you wish for him to be considered trans now, you have to reason then that the devs are saying that he became trans due to the abuse of his family forcing him to be a girl. If you want that as your hill to die on, be my guess.

If that is the story element change the developers want and they want to say this was all part of their master plan from day one. Bridget is a new addition. There were already other good looking and tough characters so they added a cute character. However, a lot of fighting games already had the token cute character, so they wanted something unconventional. They then made a cute character that's a guy. The big surprise for him was that it didn't matter that it was a guy! Bridget still got a huge following.

I can tell you with certainty that he said that only to appease modern culture. This was a guy was greatly into visual kei aestethics back in the day. To him, bridget crossdressing was just one of the ways of breaking the usual norms, based off the metal culture he also followed. Every theme had a point. The last thing that was being thought about back then was sexual. It was all meant to be an alternative take on all the stereotypical fighter designs we got in games like Street Fighter, King of Fighters, and Mortal Kombat. You can tell by the designs of each GG character that they are meant to follow the alternative clothing style.
Nowadays, nuance is lost. I can accept that someone like him changed over the years from his younger self, but I'm not an idiot to know why he said what he said now compared to then.

We can provide past evidence that puts that claim into question, but all they would have to say is it is part of my master plan for the character. Pretty much what they said in the interview. No matter how much it smells like BS we really cannot disprove their claims that it was part of their plan from the start but they were waiting for the right moment.
All that being said my point is all of that is moot, cause at this point in time within our world Bridget is trans. Fans can make all the claims they are not, if the developers feel otherwise and made the change. Until they revert the change sorry Bridget is Trans. The reason and motive being the change can be brought into question, but to deny the character is Trans in this moment in time does not seem weird.
