Logically speaking we peaked in power after killing the giant world destroying dragon and have just had minor increases in power ever since. For gameplay purposes though you just gotta suspend your disbelief, otherwise you're going to go around in circles trying to figure out how Fluffy Bunny from the final area can beat Bahamut without breaking a sweat.
