Content is long lasting when you enjoy it. When you finish content you do for the rewards you need/want, the other content is always to do for simple enjoyment's sake.

You might feel like Endwalker is a net loss, but that's your opinion when it comes to what you want for you. Others disagree. They're still enjoying the game. As long as enough players are enjoying the game enough to pay their monthly subscription fee, SE is not going to make any major deviations to their game design.

If you want a game where you can truly make your own fun, you need to find a sandbox MMO. That is not this game. This game is a theme park. There's a lot to choose from but anything repeated too many times will get stale eventually. You've definitely hit your eventually.
Has somebody here even played GW2? Someone? Anyone? Do people think it's not "major MMO"? It has 100K+ active players around the clock.

You definitely can make low level content that can not only be done by max level players, but can even be used as farm by high level player. If you do level 10 event (equivalent to FFXIV'S FATEs, but much better), you get level 10 loot, but also level 80 loot.

Because game is horizontal, most of the content is alive. Vale Guardian, the very first raid boss that released back in 2015, is still ran today, since you get similar rewards and there is no vertical gearing. Instances do merge into each other, which means that during the day there will be 10 populated maps for example, but during night, there will be just 1-2 maps, but just as populated as they were during the day. You do have reasons to go to the old maps, even if it's for few minutes to do quick daily.

FFXIV doesn't do that, it's fully vertical and that's completely fine, but that means it must constantly pump enough of current content. If not, there is simply nothing to do. Arguing that you can do X years old content is terrible since all of this content has either bad rewards, has syncing problems (no shot I'm playing PLD in Eureka, I don't even have a gap closer at 70) or is dead and not run by other players, at least not in the same capacity like it did when it was current. And if you ran in while it was current, you have no reason to run it again.
