Rathalos for me, since some people dont know where it is and when I help them farm the mount I can show my epic dodging that I learned from Monster Hunter!

I don't really like to show off and have more modest sensibilities. That said, my Onsal Hakair mount or other PvP veteran stuff seems to turn the most heads.
I don't pull out any mounts to brag.
That being said, one of the more impressive for me is the Centurio Tiger. I never was a big fan of hunts and oh boy do I regret it because I would absolutely love to have that tiger.

There are a few mounts though that are now forever unatainable so those who do have them do have bragging rights for having them (as shallow as it is) - the Legacy Chocobo, 'original' gobbue, and the PvP-specific mounts gained through PvP modes now shut down (like the FFXIII Dreadnought from The Feast) are just a few of those.
Having said that, my favourite is still the Griffin - my character is Ala Mhigan by birth headcanon wise, and it suits her even more so as a PLD wearing the latest AF set which is resplendent in Ala Mhigan griffin imagery. And the griffin is so well animated it just looks right.
Yes it's not entirelly difficult to get (it was gained through purchasing the Heavensward Collector's Edition or just paying for the 'Digital Upgrade' for an existing account for HW.), but I love it anyway.![]()
While I was grinding for it, I would have thought Pteranodon. In reality, I think it's an ugly mount and I've learned to hate the mount music for it so I've only used it like twice
Other than that, I don't think I have any mounts that are 'impressive'...
I wouldn't say it's ugly. I'd call it uninteresting and out of place. It's just Aswang (Rank B in Azim Steppe) repurposed and has no relation to crafting/gathering. It would have been better as a hunt mount.
For a mount that took over 600 hours of effort when the content was current, you'd think they could have given it something unique to its appearance and made it relevant to the content.

I second that.
There are times when you wind up in an A-train wait, S-rank wait or FATE wait (waiting for people to start, pull, etc). And people break out their impressive mounts. Usually one person hops on < insert impressive mount name > and then 10, 20, 50 other people hop on the same mount.
The most Pteranadons I've seen in one place was 3. That's not to say it is the rarest mount (it isn't). But, I'd say it is one that you can't just grind for days and finish it up. It takes months and months. I'm not knocking raid mounts. Those are hard to get, but for different reasons. Week 1, you'll have that 1 guy on the Phoenix/Serpent mount. And by week 2 or 3, you'll have about 50 of those out there. I used to see maybe 1-2 Hand of Creations around my server. Now there are dozens at all times, let alone those that just don't choose to use the title since it is more commonplace.
The only part of the Pteranadon mount that got easier was the Hand of Creation part. With higher iLvls, the expert recipes can be mostly cheesed. It still takes time, but it takes a lot less time than it used to. Similar to how certain raid mounts or trial mounts might be rare at the end of 6.0, but by 7.0, with the ability to unsync, lots of people will have those mounts.
But no amount of iLvl can save you from grinding 1.5M skyward points in Diadem.

You can see exactly what is the most impressive, technically speaking.

Just have to keep in mind that mounts released in 6.X will inherently be more rare than other mounts simply because less time has passed for players to earn that mount. For comparative purposes, the Pteranodon has an ownership rate of 0.6% (FFXIVcollect) vs the Sun-Forged that has 0.4% ownership rate. However, Pteranodon was released ~900 days ago in patch 5.21 whereas Sun-Forged was released 43 days ago.
Demi-Phionix (P4S) has an ownership rate of 15%. That's roughly 15% of the population that raids and completed it. Statics likely will cycle the mount around to all players. Give a few months, Sun-Forged will probably be at 8% followed shortly by 15% when the gear tier increases again.
I think Astrope (2000 mentor roulettes). is a great comparison to Pteranodon. It's been out over 2000 days and only 0.8% of the population have it. Astrope, like Pteranodon will creep up slowly. Some newer ones like Demi-Phionix and Sun-Forged will shoot up much more quickly.
