I struggle to make good home-made pie crust too. It never turns out the way I want it.

I have a recipe that substitutes 1/4 cup of water with vodka. Gives the dough pliancy without adding too much water and making it super sticky. The alcohol cooks off and leaves no after taste. The recipe is the "fool proof pie crust" from Cooks Illustrated. Its never failed me.
