Replacing a simple "choose from this list" setting with a section for free text is not an equal swap. There are more possibilities in a single typed letter than in your choice of guardian deity. And your search info already provides that space for free typing.

It’s a lot more bits than are being used to reference which hairstyle my character is using. My meaning is, if we need to make a choice in character creation that sticks to our status menu, it should have some kind of meaning.

It might as well be my characters favorite food or color.

And it also might as well be your guardian deity and birth date.

It's world-building. Birth date not so much (though personally I use it to track character creation date) but making you choose your guardian is basically an excuse to fit the basic lore about the Twelve into the game without having to find somewhere to fit it in dialogue.
