Can you take off your job crystal and do highend content? never tried before
You can still RP as a class even after obtaining the crystal. If you unequip your crystal, you'll be reverted back to your class.My character is a conjurer but they're not interested in becoming a white mage because of something that happened in their childhood. Is it okay if I just play as my class instead? I'll miss out on a few abilities but I should be able to heal stuff, right?
The ARR site says that classes are for people who want more flexibility in their playstyle. So they should be a valid option too? Instead of getting the job crystal.

Yes. A few weeks ago, queued into Mt. Gulg and the healer we got was a CNJ. None of us noticed until we wiped on the first pull. He was very embarrassed, left and promised to requeue with the stone on - but unforunately got placed into a different duty, leaving the rest of us to wait for a new healer.
So, yes, nothing stopping you (aside from common sense) from doing high-end content as a class, rather than a job!
In an RP sense, it's fine to not RPing using or having a job crystal. Or not having one equiped during an RP event etc.
When you're doing content with other people you absolutely should. Your RP is not worth gimping your performance when playing with strangers, and generally doing roulettes or raids in character tends to have issues anyway, especially if it isn't your first time doing that piece of content.
In an RP sense though you don't need to limit yourself to in game classes or jobs either. Your character could fight with chakrams but not be a 'dancer' related to the thavinairian trouple and doesn't have to have a stone. You can be a knight who fights with a spear but isn't a dragoon or gridanian lancer. You can fight with a sword and shield without being a gladiator or a paladin. You can RP as someone who fights with a staff/cane despite the game not having any DOW classes with them. You don't really need to limit your RP go game mechanics in gneral.
