First can we have butts that actually exist?
While I wouldn't mind adding some weight to my characters (because when available, I almost always do), from a development standpoint that would be a clipping nightmare. And a costly rework. Even on FFXV where more body sizes are represented and Comrades where you can actually make (realistically) overweight characters, you can tell certain outfits you can earn were not tested on larger body types.
Imagine if you will, all of your clothes fitting like they do on lalafels. I just. No please.
A Warrior of Light would have to be very physically fit, i.e. not obese. Ever wonder why the military doesn't accept fat people?
If you look like this, you're not healthy. Period. Regardless of what "body positivity" types try to tell you.
I once had a co-worker (Who shall remain anonymous) with a body shape similar to that picture. He could barely get up out of his seat, let alone do anything athletic. He quit after a few months due to health problems.
Also, from a technical development standpoint, it would be an enormous amount of work, similar to adding a new race, particularly when it comes to fitting all the gear.

And despite the trailer and the art book showing overweight male Mystel as well, they don't seem to have made it into the game.

Oh right! I forgot about that one walking around with the mask/hat. Can't think of any others off-hand though.
It would be nice to have sliders from head to toe, but it definitely needs to be within reason. Sorry, someone over 500 lb isn't going to be doing flips, running from one end of the world to the other, sprinting through dungeons, or managing the intense training and effort required for all the DoL and DoW jobs at the bare minimum. The argument that a human built like a roe could still adventure is one thing- but at the size of those Sims characters they'd have trouble even walking.
There's a difference between acceptance, acknowledging that there's people who are overweight- and straight up lying about it being healthy or having the physical capabilities to manage the rigorous, intense physical activities of a fantasy hero.
