I'm not sure what more you would need to handle in Eorzea after dealing with Zodiark and the Ascians, presumably also finishing the Primals for good in the process.

More than that, there's so much left to explore and other stories they could tell, we've been doing the same story since 1.0 they could tell so many more.
And yes the current story is very grand, but I'm not of the opinion that the stakes need be raised every time, a story can be just as impactful if we're simply exploring and adventuring with the stakes being one country, one city, one town, one person as opposed the whole world.
