It's not really about being social. It's rare you find a pug that will chatter in chat. Though those are always the BEST when you do. They are frequently the funniest and most enjoyable runs I have. It's more about acknowledging your party members though.

By greeting everyone you're acknowledging they're part of your party, and therefore important, for the duration of the dungeon, and by shooting off a quick thanks or GG or whatever at the end you're thanking the party as a whole for helping you get through content you can't do on your own. That kind of acknowledgment feels good to a lot of people, and for a very great many is considered basic courtesy. That's why a lot of folks emphasize it. Runs where no one speaks a single word tend to be miserable feeling experiences for most.
