Switching from DRK to GBR as I've always wanted a Gunblade class.

Nothing I love tanking in FFXIV.
By "boss mechanics" do you mean job mechanics (the question doesn't seem to make sense in context otherwise)?
My usual approach to learning a new job is to start with a striking dummy. I'll look up the optimal opener for it and practice 'til I can do it reliably. This gets me accustomed to where the skills are so I can hit them without thinking and highlights any glaring issues with how my hotbars are laid out. Openers are good for this since they're usually the most action-intensive part of the fight.
After that I would start taking the job into dungeons. There's not a huge amount to keep track of and if I mess up a mechanic it probably won't have major consequences. I take doing the mechanics seriously though, since the point is to practice being able to do the job mechanics while also handling fight mechanics. If I can, I'll ask friends to run with me that have experience with the job/role in question so I can ask them live in the moment if I encounter a situation where the best thing to do isn't immediately apparent.
So I guess in answer to your question, a combination of D and A.

Healer. I almost only play healer and I mix it up and play all 3 quite often but Scholar's my favourite

Maybe not for launch.

Either of the other roles depending on how launch goes really. For DPS probably BRD as my static will definitely have a DRG/DNC and for tank either PLD/DRK most likely. I prefer bard for it's support-y nature (even if some of it's supports going T.T) and the fact that I currently find it fun and it doesn't seem to be changing too much. PLD i like the support and DRK is fun so I'll have to try them both out =)

The fact that I almost always play healer/support roles and I've mained scholar (and healers more generally in FFXIV) since 2.0. I started as arcanist because scholar was a pet healer. But I'm going to wait for the first raid tier to see how all the changes play out. If it doesn't really do much for me, I'll have to talk to my static about it but they already know I'm on the fence about this so we'll probably be able to think of something. I wouldn't mind attempting solo healing though =O

4. Are you switching because: Its A. Several of the changes to DRK on paper dont look appealing but I will have to wait and see before I make a full jump ship attempt.

I like playing mainly SAM, WHM & PLD, according to my mood. But if I had to have a main job it would be SAM.
2. Are you considering trying out or changing to a different role for the launch of Shadowbringers?
No, but maybe after my SAM Lvl 80, I think I'll test GNB.

My job of heart will stay in SAM, because I was a Kendo Irl practitioner, as far as my tank job is concerned, I think I'll stay PLD. I will not comment on the GNB without trying it.

It really would be necessary that my feeling with my favorite jobs changes radically to the points that it disgusts me, to change job, while keeping in mind that I like the fight with Mêlée (SAM), Tank and Heal.
I also like to play NIN & BLM (SB), maybe if I like GNB & DNC, I'll add them to my favorite secondary jobs, but for the moment, the DNC doesn't really interest me, like MCH & BRD.

I've been playing Tank a lot in recent times, mostly PLD...

Well, I'm going to go through the MSQ of Shadowbringers 5.0 as a Gunbreaker... So... Not immediately at least.

D I guess is closest, I have two characters because I used to play on two different data centers, one has PLD and WAR for tanking and I like both, the other has PLD and DRK. I just can't get myself to enjoy DRK, so I'm hoping to replace that with GNB.

Tempted to try out Dancer, and will more than likely do it later on. But like I said, going GNB for the MSQ.

Ah well, then I'd still stick with a combination of D and A. It's hard for stuff to go catastrophically wrong in a dungeon as long as you have at least a vague idea what the job you're playing is supposed to do, but having friends along helps (and is also more enjoyable).
I was waiting til you had clarified ^.^ Tbh all you can really do is just get into the fight and do it if looking up a guide isn't for you. If you feel uncomfortable with doing it, I'd ask a friend to come with me so it's kind of a mix of A and D. If it's an EX or Savage fight you can always start a PF learning party and that way everyone knows but for EX+ people tend to like it if you look up a guide first. Practice makes perfect.
One thing you notice is that certain types of attacks happen at certain times and that some attack names sound like a tank buster/raidwide. For example, I've noticed this in SB so I can't remember if it applies to earlier 24 mans but usually one of the first moves for these bosses is a raidwide AOE. Also usually after a 1hp attack you either have to get the party up fast or the tanks (e.g. Charybdis in Deltascape v1.0, Alte Roite follows with either a raidwide AOE or Twinbolt which "should" hit the tanks....should XD). As an example of the name thing, I'd point you towards Arm Hammer in Sigmascape v3.0 which sounds like a tank buster.
