This is EXACTLY what happened to me, trial, physical collectors, deleted data, used code to download digital.I should have clarified: I downloaded the digital free trial originally, then bought a physical 'complete edition'.
When I first inserted the disc, it prompted me to delete the digital version, so I did that. Installing the disc didn't unlock the full version though - I had to put the code that came with the disc into PS Store to register it. When I did that, I noticed that it seemed to have given me a digital link to download the game - so I took out the disc, deleted the disc data, and was able to download the digital version of the game.
It's never required me to use the disc again, because I'm not actually playing the disc version. Either way it only gives you the base program, and you still have to download all the patches.
I think I got the link by typing in the code again, but it probably should have gone into the game library as well.
TL;DR: even if you haven't directly purchased a digital copy, you might still have one available to you.
I still need to use the disk.

Did you take out the disc before downloading it though? No idea if it actually made a difference, but I did that to be extra-sure it would install the right version and not draw any information from the disc.
Also, to be sure, you said "physical collectors" edition. Is it a three-in-one complete game (that's what I have) or a Stormblood expansion collectors' edition? Perhaps the data and/or permissions are different.
I checked the program information (Settings > Storage > System Storage > Applications) - I have version 7.50 and the file size is 34.87 GB. Is that the same for you?
